Taco Bowls (Sugar free • gluten free • low carb)

This is a super quick and easy way to get your taco fix.  And if you or someone you are dining with would prefer their taco filling in a shell, this is perfect for that too.  Yum!

We make this all the time and today someone asked me for the recipe.  I realized I have never added it to my blog! I will add a picture the next time I make these.  


TACO BOWLS
(sugar free • gluten free • low carb)
Makes 6 Servings

  • 1 pound ground beef
  • 15 oz black beans, drained and rinsed
  • 1 cup shredded Cheddar cheese (or cheese of choice)
  • 1 cup salsa
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder


Optional Toppings: Diced avocado, diced tomato, diced onions, shredded lettuce, sour cream, sliced black olives, more shredded cheese

  1. Place a large skillet over medium-high heat. Add the meat and cook, breaking up the large pieces, until the meat is no longer pink, about 5 minutes. Drain excess fat.
  2. When the meat is done, add the beans, cheese, salsa, cumin, chili powder, and garlic powder and stir to combine. Cook until the cheese melts and the mixture is heated through, about 2 minutes. 
  3. Serve in a bowl with additional toppings.

Secondly, I love how much you share about parenting! I'm just about to have my first and it's so nice reading your perspective. And lastly, I'm DYING over your recipes!
