For part of our lunch, I decided to throw together some guacamole. I just absolutely adore chunky guacamole. And nothing is better then the homemade kind. This is my top secret recipe. I guess it won't be much of a secret anymore. I love that it's quick and easy and always gets rave reviews when I bring it to a party. This is delicious served as a dip or as a topping on chicken, burgers, tacos, or all sorts of other things.
As far as the seasonings, I am totally guessing here. I usually just throw the stuff into a bowl and taste it as I go, adjusting accordingly. This should be pretty close though.
This is a party size recipe, so definitely cut the recipe down for a smaller amount. This is best eaten fresh. It will brown easily if it sits around too long.
CHUNKY GUACAMOLE A.K.A. THE BEST GUACAMOLE EVER
(sugar free • gluten free • low carb • dairy free • gaps)

- 6 Avocados
- 3 Roma Tomatoes
- 1 Small White Onion
- 1 Lime (for juice, you can also just use store bought lime juice in a pinch)
- 1/2 Bunch Fresh Cilantro
- 1/2 Tb Garlic Powder
- 1/2 Tb Onion Powder
- 1/2 tsp Cayenne Pepper
- Salt & Pepper to taste
Directions:
- Slice avocados in half and pull apart. Remove seed. Take knife and slice lines through to skin every 1/4" or slow. Follow the same procedure in the opposite direction, making a grid over the avocado. Take a spoon and scoop out the avocado meat into a large bowl. Repeat for the rest of the avocados.
- Chop tomatoes and onion, add to bowl.
- Roll lime around on the counter with the palm of your hand, pressing firmly to loosen up the insides. Slice lime and squeeze juice over the ingredients in the bowl.
- Chop cilantro and add to bowl.
- Add the rest of the seasonings.
- Mix everything together and serve immediately.
- Enjoy!

Our old neighbor had a HUGE avocado tree and also had a HUGE dislike of avocados LOL We lived on them for a bit...Don't ever make it chunky...but I am gonna try now :) Thanks!

Love it, I like adding Serrano peppers to it or jalapeño. Try adding a little more lime to keep from browning. And seal with plastic wrap touching the guacamole and up the side of the bowl. Just little tricks I use. Love your healthy food. Thanks Caryn
carynsunny, I am so glad you like the recipes! Those are some really great tips you left too. I actually just started using the trick with the plastic wrap touching the guac to keep it longer... it works wonders!! I also use lime (or lemon juice) on all kinds of other things too to keep them from browning. Like when my daughter only eats half of her apple, it stays great till the next day with a little lemon juice :)
